Six Seven at the Edgewater is an experience. An experience locals cherish and tourists remember. It’s located on Seattle’s Pier and inside Seattle’s only waterfront hotel. The floor-to-ceiling windows immediately drew my eyes to the magnificant Elliott Bay, Puget Sound and the Olympic Mountains. The most stunning water view Seattle has to offer. After a moment of appreciation, I was led to my table which was quite possibly the most inviting seating arrangement I have ever seen in a restaurant. It resembled living room sofa seating. Cushioned sofa-like chairs with throw pillows surrounding me, gave me a warm “at home” feeling. The fireplace was only steps away, the window view inches away and the dim lighting was perfect. I didn’t know whether to look at the menu first or take a quick 20 minute nap. I opted for the menu.

I was dining with Kristin Ackerman, the Publisher of Sip Northwest Magazine. By letting her select the wine, I knew it would be top notch. We ordered a fantastic bottle of ’06 Northstar, Columbia Valley, Washington. Nose of blackberry, plum, vanilla, mint, and a little smoke. Dark, deep and smooth with a palate of vanilla, blackberry and cherry. It was the perfect selection.
For dinner we filled the table with Six Seven’s recommendations and shared each plate. In my opinion, this is the only way to dine. The days of one entree per person are are few and far between for me. In front of us sat the Cedar Plank Salmon with rainbow potatoes, forager mushrooms, pancetta, asparagus, tomato, truffle cream and blackberry honey served on a cedar wood plank. I have never been a salmon fan but this was unlike any salmon I had tasted. The Sage Brined Skagit Valley Chicken with full circle farms organic baby vegetables, garlic thyme jus and blackened lemon was served in a large stainless steel cookware bowl. It was juicy, delicious and full of flavor. Our 3rd entree was the Oregonzola Crusted Harris Ranch Filet Mignon with forager mushroom ragoût, asparagus, potato crisp and natural jus. It was tender and cooked to perfection. All entrees were beautifully presented and satisfied the palate on every level. Alongside the entrees we shared the Lobster Mac and Cheese which was loaded with lobster and their signature 6 cheese sauce. It was creamy and absolutely divine!
After all of this we still had room for dessert. Not much room but we had to round out our dinner, right? We ended our dining experience with the Crème Brulee and espresso. The perfect end to a perfect evening.
I have been back for dinner a few times since and each time the service at Six Seven has been impeccable. The waitstaff is incredibly attentive. General Manager Edward Moses and Chef John Roberts are very warm, personable and knowledgeable. The entire staff really has a way of making you feel comfortable and as though you have known them for a lifetime. It’s no longer a handshake and hello, it’s hugs all around.
Dining at Six Seven will always be one of my most memorable dining experiences.
